To a lot of non-raw foodies, the term "Raw Food" conjurs up one thing: Lettuce. Lots & lots & lots of lettuce. Then there's the prep aspect - sometimes, it can be worse than cooking, what with all the rinsing & chopping & slicing & dicing...yikes. And if you're not particularly domestically inclined, like yours truly, you revert to one of two things:

  1. Resign yourself to a life of salads.
  2. Eat out all the time.

Which is why classes on prepping raw food dishes with names like:

  • Kabocha Pumpkin Soup
  • Mushroom Stroganoff Soup
  • Delicata & Beet Crustless Quiche with Spinach Truffle Creme
  • Collard Canneloni Stuffed with Sweet Corn & Creme Fraiche in Sun-Dried Tomato Coulis
  • Chocolate Hazelnut Tartlett with Blood Orange Preserves
  • Lavender Peppermint Ice Cream with Cacao Nibs

ie. anything that doesn't have the word "salad" in it - caught my eye.
