Pecan Pralines Bring Home an Irresistable Taste of New Orleans. FASHIONTRIBES SWEET TOOTH BLOG

Pralines

According to The Worldwide Gourmet, pralines originated in 17th century France. The chef de bouche of the Comte du Plessin-Praslin household was trying to find a way to prevent nuts from giving his master indigestion, and coating whole almonds in sugar seemed to do the trick. 19th century chef Viard included a recipe for the sweet - named for the Comte -in his Le Cuisinier Impérial, as influential as The Joy of Cooking in its day. The French brought pralines with them to Louisiana, where Creole cooks substituted pecans which grew locally and plentifully.
